Homemade Ice-cream - Easy!


For those who love creamy ice-cream, but also hand scooped ice-cream. 

You do not even need an ice-cream maker or the mess of the salt or ice. 


5 and 1/4 cups of cream

3 and 3/4 cups whole milk

2 and 1/4 cups sugar

pinch of salt

3 tablespoons of vanilla extract (organic with no alcohol) or 3 vanilla split vanilla beans.

(optional) any other add-ins such as candy, cookie dough, brownies, cut strawberries or other fruit. 


In your large pot mix all ingredients except for the vanilla and add-ins.

Cook over medium heat until the sugar is dissolved and it comes to a low simmer.

Stir constantly. Don't play on your phone or run off the change the laundry. You have to stay right with it. If you are using vanilla bean I like to cook it in at this point to maximize the flavor.

Remove from heat and add the vanilla and any add-ins. 

Pour into a freezer safe container. I just put the whole pot in the freezer to save on extra dishes.

Freeze overnight.
