Preheat oven to 350
1 box of strawberry cake mix (I used Pillsbury)
Do not follow recipe on the back! Instead add:
1 cup pineapple juice
3 eggs
1/2 cup of olive oil
Blend together very well.
Fill cupcakes 1/2 full
Bake for 20 min.
Decorate the top with whip-cream, strawberries, powdered sugar, or other fun topping.
We used almond whip but I'm sure coconut whip would be yummy too.
My youngest came up with the idea to make cat ears.
